I've been missing Dad a lot. There are several little things I would love to call and tell him. There are many more things I would love to ask him. I would love to just hear him. He had a great laugh.
Dad was a good cook. His gumbo is one of my favorite foods. Luckily my brother learned how to make it, so it is a flavor that will live on. He LOVED steak. He cooked a fabulous steak and was happy to make one for anyone else who happened to be visiting. He'd cook it any way you like it - provided that way was medium with salt and pepper. To this day, that's the only way I love steak. I like it other ways, but Dad's way is the best to me.
The Saturday after Dad's death, MH wanted a steak. I wasn't feeling happy about returning to cooking, so I told him if all I had to do was wrap potatoes in foil, that we could certainly eat steak. MH picked up some lovely ribeyes and grilled them to perfection. At the time, I wasn't thinking about it being one of Dad's favorite meals, but when I saw it on the plate, I knew it was the perfect meal for the day.
Our recent family Christmas meal was steak and baked potatoes. Oh, was it ever a great idea and delicious. With the exception of the obvious holes around the table, it was a great meal.
Last summer, Dad bought a smoker. When he did, he retired some of his grills (yes, plural). He gifted MH with a great cast aluminum grill, but we needed to replace the grates. MH ordered and received the grates last week and was itching to use the grill. Friday night, we picked up another fabulous ribeye. It may have been the best steak I've ever eaten. My goodness. Even Tot was saying "mmmm" after each bite.
I love and miss my Dad. For now, steak makes me a little weepy, but I am so glad that he (and Mom) instilled a love of great food in me.
